Sweet spiced christmas delights

Christmas is just around the corner and these treats are sure to be chomped down in a flash. Like last night; from 12 to zero. Okay okay there were three left by the end of the night, I’m not saying who the main muncher was, but my sister was getting into them like no tomorrow (sorry Kermit).

Filling:

2 red apples

1 t vanilla bean

3/4 C sultanas

3/4 C raisins

3/4 C cranberries

Juice of 2 oranges

1 T coconut oil

1 t cinnamon

1 t ground ginger

Chop apples into small pieces and place them in a saucepan. Add the rest of the ingredients and simmer for about 30 minutes until the apples are nice and soft. While the filling is cooking make a start on the crust.

Crust:

3 1/2 C ground almonds

3 C dates softened in hot water + drained

6 T coconut oil

4 T water

1 1/2 C spelt flour

Blend all together in a food processor till well combined. Roll out little bits at a time on a floury surface as it tends to be quite a sticky mixture. Cut out circles using a cookie cutter and place in a greased  muffin tin. Bake for 8 minutes at 180′. Cut shapes out using the remaining mixture, this will be for the top.

Once the crust is cooked take it out and add the filling, then place a shape over the  top. Bake for another 8 minutes. Take out of the oven and cool before enjoying.
